Food safety is a major concern around the world due to toxic metal contamination in food and associated health risks. Vegetables, cereals baked goods make up large part of healthy human diet as vital sources nutrients, minerals fiber. Long-term intake metals with facilitates their accumulation body. The study aimed assess risks for adults children caused by alimentary chemical elements local products. was conducted Republic Bashkortostan, which territory developed agricultural industrial complex. A total 524 plant samples were selected analyzed identify levels lead, cadmium, copper, zinc, iron, nickel aluminum them using atomic absorption analysis. Samples included bakery cereal products sold republic vegetable from private farms. article describes results hygienic assessment its focus on contents essential locally produced foods.
